Valerie Confections' Peppermint Bark

While I'm on a peppermint kick, I thought I would post this super easy, delicious peppermint bark recipe!  Valerie Confections in Los Angeles is known for 2 things: fruitcake & peppermint bark! Apparently, they sell out of it each year even though they make more each year to accommodate and still can't fill all of the orders.  That's some seriously delicious confection!

But why chance it when ordering from them when you can make your own!  It's seriously one of the easiest recipes you'll make all year and it's only a couple of ingredients.  Valerie's makes their own peppermint candy for on top (of course) but I'm not great at sugar candies so I just crushed up some candy canes...delicious!  So where they used peppermint oil in their crushed candy, I added it directly to the white chocolate for an extra kick!  Some of the ingredients are optional but to make a true copy of Valerie's recipe, you'll want to add them all.

Peppermint Bark
10 oz. 60% bittersweet chocolate (chips or bars chopped into small pieces)
10 oz. white chocolate chips
peppermint leaves, dried (enough to make 1-2 teaspoons, optional)
peppermint oil (optional)
2 candy canes, crushed

Melt the bittersweet chocolate and spread into a small baking pan, sprinkling dried peppermint leaves on top.  Tap pan on counter top to remove any bubbles and evenly distribute the chocolate. Place in freezer to harden.
Once hardened, melt the white chocolate chips.  Add 3-4 drops peppermint oil and stir to combine.  Spread over top the chocolate, tap on counter to remove air bubbles, then quickly sprinkle with the crushed candy canes.
Place into the freezer for 15 minutes to completely harden, then break into large pieces for serving.  Store in freezer or refrigerator until ready to serve.
